Cultural context
Beshbarmak means "five fingers" — eaten by hand. While not strictly an offal dish, it is a major vehicle for marrow and tongue consumption at ceremonial meals. The marrow bones and tongue are distributed to honored guests. One of Central Asia's most important feast traditions.
Preparation
Meat and marrow bones boiled in seasoned broth. Flat pasta sheets (zhaima) cooked in broth. Assembled in layers with meat, onion sauce, and broth. Marrow bones and tongue served alongside as prestige elements.
