Kerala's defining intestine tradition and one of the strongest in South Asia. Beef intestines pressure-cooked then roasted with black pepper, curry leaves, fennel, coconut oil, and spices.

Cultural context
Especially important in Malabar Muslim cuisine and toddy-shop culture. Chaal roast is a recognized specialty rather than an everyday dish. Far more prominent in Kerala than intestine dishes elsewhere in India.
Preparation
Intestines cleaned extensively and pressure-cooked. Roasted with onions, ginger, garlic, black pepper, chili, fennel, curry leaves, and coconut oil until dry and well-coated.
