Uzbekistan's signature intestine tradition. Intestines stuffed with rice, organ meats, fat, and spices, then boiled and sliced. A recognized dish rather than merely a sausage.

Cultural context
Unlike ordinary sausage traditions, Hasip is itself a recognized Uzbek dish served at feasts and celebrations. Especially associated with Bukhara and traditional market food. Comparable to Egypt's mombar and Saudi Arabia's masarin in being a culturally distinct stuffed-intestine preparation.
Preparation
Intestines cleaned thoroughly. Stuffed with rice, chopped organ meats (liver, heart), tail fat, onion, cumin, and pepper. Tied at intervals and boiled until cooked through. Sliced and served warm with bread.
