Dedicated liver stalls operate throughout Jeddah, Mecca, and Riyadh. One of the strongest liver street-food traditions in the Arab world. Comparable to Egypt's kibda iskandarani in cultural prominence but with a distinctly Saudi spice profile.
Preparation
Fresh liver sliced thin. Rapidly sautéed in oil with garlic, black pepper, cumin, chili, and sometimes tomato. Served immediately with khubz flatbread.
