Kerala's most common liver preparation. Liver quickly stir-fried with onions, black pepper, curry leaves, ginger, garlic, and coconut oil. Ubiquitous in restaurants, toddy shops, and home cooking.

Cultural context
One of the most everyday offal preparations in India. Karal fry appears across communities — Christian, Muslim, and many Hindu households. The black pepper and curry leaf combination is distinctively Keralite.
Preparation
Liver sliced thin and marinated briefly with turmeric, chili, and pepper. Stir-fried rapidly in hot coconut oil with onions, ginger, garlic, green chilies, curry leaves, and black pepper. Finished with fresh coriander.
