Saudi Arabia's most important intestine tradition. Intestines stuffed with rice and spices or grilled over charcoal. One of the Gulf's strongest intestine traditions.

Cultural context
Especially prominent in Jeddah and western Saudi Arabia. Particularly associated with Eid al-Adha and family slaughter events. The stuffed version (masarin mahshi) resembles Egypt's mombar — both reflect a broader Arab tradition of stuffed intestines.
Preparation
Intestines cleaned thoroughly. Stuffed with rice, onion, tomato, herbs, and spices then simmered. Or cleaned and grilled directly over charcoal with salt and cumin.
