Mongolia ranks among the strongest marrow cultures globally. Marrow is explicitly valued for nourishment and strength — children are encouraged to consume it. Unlike France's roasted marrow or Vietnam's phở broth, Mongolian marrow is consumed directly and prominently rather than as a background ingredient. Comparable to Ethiopia's direct marrow consumption and Kazakhstan's marrow feast traditions.
Preparation
Marrow-rich leg bones boiled in salted water. Split at the table. Marrow scooped directly with a spoon or tipped onto bread. Consumed fresh and hot.
