Cultural context
Lanna (northern Thai) larb is one of the most distinctive offal traditions in Southeast Asia. The use of bile as a seasoning element is unusual in global offal traditions. Organ larb incorporates a wider variety of cuts than muscle-meat larb. Especially associated with Chiang Mai and highland communities.
Preparation
Organs finely chopped or minced. Dressed with bile, dried spices (makhwaen pepper, long pepper), toasted rice powder, dried chili, shallots, garlic, and fresh herbs. Served raw or lightly cooked depending on region and preference.
