Padang Beef Offal
Asia — Indonesia (West Sumatra)
West Sumatra's Minangkabau cuisine produces one of the world's most complete whole-animal beef systems. Tripe, tendon, skin, and marrow are all cooked in rich coconut-milk curries with complex spice pastes.

Cultural context
Padang restaurants (Rumah Makan Padang) operate throughout Indonesia and internationally, spreading Minangkabau offal traditions nationwide. The Padang system is unusual because it treats connective tissues — skin, tendon — with the same culinary seriousness as organs.
Preparation
Each cut cooked separately in rendang-adjacent or gulai-style coconut milk curry with turmeric, galangal, lemongrass, chili, garlic, and shallots. Served at room temperature in small dishes alongside rice.
