Cultural context
Skilpadjies (Afrikaans for "little tortoises") are a defining feature of South African braai culture. The caul fat wrapping bastes the liver during grilling. A direct parallel to Morocco's boulfaf and Turkey's ciğer sarma — an example of convergent offal cookery across cultures. Common at farm braais, family gatherings, and traditional celebrations.
Preparation
Liver cubed and seasoned with salt, pepper, and sometimes coriander. Wrapped in caul fat (omentum). Grilled over open coals until caul fat renders and crisps. Served immediately.
