Gurda-Kapura

One of Pakistan's most distinctive offal traditions. Kidney and kapura (testicles and/or glandular tissues) rapidly griddle-fried together. Dedicated stalls operate across major cities.

Cultural context
Gurda-kapura stalls are a fixture of Karachi, Lahore, Rawalpindi, and Peshawar food culture. One of the world's most commercially visible testicle traditions. Kapura terminology varies across South Asia — in Pakistani usage it most commonly refers to testicles.
Preparation
Kidneys and kapura cleaned and chopped. Cooked rapidly on hot tawa with butter or ghee, green chilies, onions, ginger, garlic, and spices. Served immediately with naan and chutney.
