Cultural context
Kuchmachi is one of the most culturally distinctive organ dishes in the Caucasus. The blue fenugreek and pomegranate combination is uniquely Georgian. Found at supras (feasts), traditional restaurants, and family celebrations throughout Georgia. Comparable to Armenia's tzhvzhik but with a distinctly Georgian spice profile.
Preparation
Organs diced and sautéed in butter or fat with onion and garlic. Blue fenugreek, ground coriander, and chili added. Finished with pomegranate seeds and fresh herbs. Served warm as a starter or feast dish.
