Cultural context
Historically common in Ukrainian home cooking. Part of the Central and Eastern European brain-with-eggs pattern shared with Poland's móżdżek z jajkiem, Czech mozeček s vejci, and Russian mozgi preparations. Consumption declined after BSE-related concerns.
Preparation
Brain soaked in cold salted water, membrane removed. Poached in salted water with vinegar. Broken into pieces and scrambled with beaten eggs, butter, onion, and parsley.
