Cerebral tissue. Prized for its delicate, creamy texture. Historically important in Mexican taquería culture (sesos), French bistro cooking (cervelle de veau), Italian fritto misto (cervello), and Spanish tapas (sesos rebozados). Consumption declined in Europe following BSE-related restrictions in the 1990s but remains culturally significant and active in many non-European traditions.
