Cultural context
The braai is South Africa's national cooking tradition. Offal is a standard part of traditional braai culture across Afrikaner, Black African, and Coloured communities. Skilpadjies is the most famous element but liver, heart, kidney, and sweetbreads all appear regularly.
Preparation
Each organ cleaned and seasoned with salt and spices. Grilled over hardwood coals. Liver often wrapped in caul fat (skilpadjies). Intestines boiled first then finished on the braai. Served with pap, chakalaka, and braai bread.
