Cultural context
Pepper soup is served at restaurants, bukas, and homes throughout Nigeria. Different organs are ordered separately or as assorted meat. Brain pepper soup is especially associated with specialist vendors. One of the most culturally embedded multi-organ traditions in Africa.
Preparation
Organs cleaned and boiled until tender in spiced water. Pepper soup spice blend added with scotch bonnet, crayfish, uziza leaves, and seasoning. Simmered until broth is fragrant and thin. Served with bread, agidi, or alone.
